  • Pantry-Friendly (used in this blog) – no mirin or sake required.
    • Golden syrup (as written) = closest flavor to mirin.
    • Swap golden syrup 1:1 with honey (sweeter, light floral note).
  • Traditional – classic Japanese-style miso glaze with mirin.
    • If you don’t have mirin, use light corn syrup 1:1 as a direct substitute.
  • Keto-Friendly – low-carb version using monk fruit sweetener. (Use about 30 g monk fruit sweetener for every 45 g sugar; adjust to taste.)

Each version can be made with red or white miso. Red miso gives a deeper umami flavor, while white miso is milder and slightly sweeter.

2. Traditional Version: (Classic Japanese-style miso glaze)

  • 200 g (7 oz) red or white miso
  • 25 g (0.9 oz) ginger, finely grated
  • 10 g (0.35 oz) garlic, finely grated
  • 50 g (1.75 oz) mirin
  • 45 g (1.6 oz) sugar
  • 40 g (1.4 oz) vegetable or olive oil
  • 20 ml (0.7 oz) water

3. Keto-Friendly Version: (Low-carb alternative)

  • 200 g (7 oz) miso
  • 25 g (0.9 oz) ginger, finely grated
  • 10 g (0.35 oz) garlic, finely grated
  • 53 g (1.85 oz) monk fruit sweetener
  • 44 g (0.92 oz) water
  • 3.5 g (0.12 oz) rice vinegar (optional)
  • 40 g (1.4 oz) vegetable or olive oil

Notes:

  • Choose your miso: Use red miso for a deeper, stronger umami punch, white miso for a milder, sweeter flavor, or mix them half-and-half for a balanced sauce.
  • Adjust thickness: If the sauce feels too thick, whisk in a little extra water, 1 teaspoon at a time, until it coats the chicken smoothly.
  • Keto version tips: Monk fruit sweetener blends can taste lighter once cooked. For a richer flavor, add a touch more sweetener to taste (about 10–15% extra).
  • Vinegar balance: A small splash of extra rice vinegar can sharpen the sauce if you prefer a brighter finish.
  • Sweetener swap: To replace sugar, use about 29–32 g monk fruit sweetener for every 45–50 g sugar. Adjust slightly depending on the brand, as sweetness strength can vary.

Air Fryer VS Oven Miso chicken

Not sure whether to use the oven or air fryer? Both work beautifully for miso chicken — it just depends on your cut, batch size, and how much time you have.

  • Air Fryer – Faster, with crispier skin and more intense browning. Great for busy weeknights or smaller portions. (I use a Ninja Dual Zone 9.5L, which browns more aggressively than many other models, so I use a slightly lower temperature.)
  • Oven – Slower but ideal for cooking larger batches or half chickens. The heat is gentler, often leaving the meat a little juicier.
  • Flavor & Texture – Both methods caramelize the miso glaze beautifully. The air fryer tends to produce more char, while the oven creates a softer, even roast.

Chef’s Note — Cooking Time

The exact cooking time depends on the cut and whether it’s bone-in or boneless:

  • Chicken breast (boneless) – cooks fastest.
  • Chicken thighs (boneless or bone-in) – bone-in takes longer.
  • Half chicken – requires the most time, especially bone-in halves. (Bone-out halves are quicker.)

    • Boneless breast or thigh: ~12–14 minutes
    • Half chicken: ~15–18 minutes
  • Oven → 200–220°C (390–430°F), no fan
    • Boneless breast or thigh: ~15–20 minutes
    • Half chicken: ~25–30 minutes
  • Always check doneness → internal temperature should reach 75°C (167°F) and juices run clear.

Tip: Use these times as a guide only. The safest way is to check with a thermometer, since chicken size and cut make the biggest difference.

  • Chicken Thigh (boneless) – Juicy and tender, with plenty of flavor. Here it’s served with coconut cauliflower rice for a light, balanced meal.
  • Half Chicken – Perfect for sharing, with a mix of both white and dark meat. This version uses a red and white miso half-and-half glaze, paired with cauliflower rice.
  • Chicken Breast (sliced) – Lean and mild, ideal for soaking up the miso glaze. Here it’s topped with white miso glaze and served with turmeric coconut cauliflower rice for extra color and flavor.

Miso Chicken Step by Step

Method – Miso Chicken (Pantry Version)

1. Prepare the Marinade

Step 1. Combine miso paste with golden syrup, oil, water and sugar for the marinade base.
Step 2. Grate fresh ginger into the miso marinade.
Step 3. Add garlic and the rest of the ginger to complete the mix.
Step 4. Whisk the marinade until smooth and well combined.

2. Prepare the Chicken

Step 5 (Thigh). Cut a slit in each chicken thigh so it cooks evenly and absorbs the marinade.
Step 5 (Breast). For chicken breast, cut in half for even cooking and marinating.
Step 6. Add the chicken to the bowl with the marinade.
Step 7. Spread the marinade evenly over the chicken.
Step 8. Make sure the chicken is fully coated in the miso marinade.

3. Cook the Chicken

Air fryer Method
Step 9. Place the marinated chicken skin side up in the air fryer basket.
Step 10. Brush with extra miso marinade during cooking.
Step 11. Cook until the chicken is golden, caramelized, and fully cooked through.

  • Airfry at 180 °C (356 °F) for 12 minutes.
  • Brush with marinade, then airfry at 200 °C (392 °F) for 2 minutes until bubbling and glossy.

Oven Method
Step 9 (Oven Option). Place the marinated chicken skin side up on a lined baking tray.
Step 10 (Oven Option). Brush with extra miso marinade during cooking.
Step 11 (Oven Option). Bake until golden, caramelized, and fully cooked through.

Brush with marinade, then bake at 200 °C fan (392 °F) for 5 minutes until bubbling and glossy.

Roast at 190 °C fan (375 °F) for 20 minutes.

Method – Coconut Cauliflower Rice

Step 1. Add coconut to a dry pan over medium heat.
→ Sprinkle desiccated coconut into a skillet to start toasting.

Step 2. Stir constantly until golden brown.
→ Keep stirring so it toasts evenly and doesn’t burn.

Step 3. Pour coconut milk into the pan.
→ Add coconut milk and bring it to a gentle simmer.

Step 4. Stir in the cauliflower rice.
→ Mix well so the rice is evenly coated with coconut milk.

Step 5. Fold in toasted coconut.
→ Return most of the toasted coconut to the pan, saving some for garnish.

Step 6. Finished coconut cauliflower rice, ready to serve.
→ Fluff with a spoon and garnish with the reserved coconut.

  • 120 ml coconut milk
  • 30 g desiccated coconut

  • 1/4 bunch fresh coriander (cilantro) leaves

Optional Quick Dressing

  • 1 tbsp olive oil
  • 1 tsp rice vinegar or lime juice

Instructions
 

Miso Marinade (Pantry Version)

  • In a small bowl, whisk together miso paste, golden syrup, sugar, oil, and water until smooth.

Prepare the Chicken

  • Cut a slit in each thigh (or halve the breasts) so they cook evenly.
  • Add ~15 g marinade per 100 g chicken and coat well.
  • Let marinate for 10 minutes.

Cook the Chicken – Air Fryer

  • Place chicken skin-side up in the air fryer basket.
  • Cook at 160 °C (320 °F) for 12 minutes.
  • Brush with extra marinade, then cook 2–3 minutes more at 200 °C (392 °F) until bubbling and caramelized.

Cook the Chicken – Oven Option

  • Place chicken skin-side up on a lined baking tray.
  • Roast at 190 °C (375 °F, no fan) for 20 minutes.
  • Brush with reserved clean miso marinade, then bake at 200°C fan (392°F) for another 5 minutes, until bubbling, caramelized, and cooked through.
  • Check that the thickest part of the chicken reaches 75°C (167°F).

Meanwhile – Coconut Cauliflower Rice

  • Toast desiccated coconut in a dry skillet until golden. Set aside.
  • Pour in coconut milk same skillet and bring to a gentle simmer.
  • Stir in cauliflower rice and salt; cook 4–5 minutes until fluffy.
  • Fold the toasted coconut back and cook for 1 more minute to combine.

Optional Salad

  • Slice cucumber and radish into matchsticks.
  • Toss lightly with olive oil, vinegar/lime juice, and salt (if using dressing).
  • Top with coriander leaves.

Assemble & Serve

  • Spoon coconut cauliflower rice into bowls.
  • Top with miso chicken.
  • Garnish with the optional salad. Serve.

Notes

Use 115 g total marinade for this recipe: 75 g for marinating the chicken and 40 g reserved separately for brushing during cooking. Store the remaining marinade in the refrigerator for up to 1 week. 
  Cooking the cauliflower rice while the chicken roasts keeps this a true 30-minute dinner. Toasting the coconut first brings out a nutty aroma and makes the rice more flavorful.
